Conker Raspberry Gin
Conker Raspberry Gin
Our Dorset Dry Gin infused with the finest British Raspberries.
The first fruit gin from our Distillery is an uncompromising dedication to the mighty Raspberry.
We start by distilling our flagship Dorset Dry Gin in tiny batches with locally foraged Gorse flowers. Post distillation we slow infuse the gin with British raspberries that have been frozen at the point of harvest and peak ripeness.
We are reducing food waste by using the broken berries that are outrageously delicious, but wouldn’t make it onto your Gran’s Pavlova.
Tasting Notes:
Fresh raspberries and a piney juniper on the nose, tart raspberry jam and dry spice on the palate, with a long red fruit and citrus finish. Delicious!
Serving Suggestion:
Perfectly pairs with classic tonic water, bitter lemon or ginger ale, garnished with a slice of lemon and fresh mint.

Our Process.
Dorset Dry Gin
We start by Distilling our Dorset Dry Gin in small batches, using botanicals that can be found growing across Dorset.
Always from Fruit.
We use the finest British Raspberries from Herefordshire, quickly frozen at harvest. Not a single flavouring or colouring added. Ever.
Slow Infusion
Raspberries are steeped in Dorset Dry Gin for a week, slowing infusing their incredible flavour and intense colour into the gin.
Classic and Versatile
Using real fruit makes for incredible drink versatility. Its fruity, but also dry like a gin should be.
The Ten Botanicals of the Dorset Dry Gin
Our Raspberry Dorset Gin is made using our Dorset Dry Gin. A classic and Juniper led Gin, but with a little something fresh from Dorset.
Each botanical plays it part in delivering a moreish gin full of a crisp dry spice, a comforting blend of citrus, and a long herbaceous freshness from our Dorset inspired botanicals.
1/10 - Gorse Flowers
Ulex europaeus
Foraged from our Dorset clifftops, Gorse lifts the Dorset Dry from its classic London Dry roots, adding a subtle nectar sweetness and hints of camomile and honey.
2/10 - Marsh Samphire
Salicornia europaea
Found growing in the salty shallows of Dorset’s coastline, Marsh Samphire is distilled to remove its intense saltiness, revealing herbaceous green flavours akin to green tea and a remarkable vegetal sweetness.
3/10 - Elderberry
Sambucus
Elderberries bring a cooling blueberry-like fruitiness from Dorset’s hedgerows and neighbouring New Forest. A good nose can pick out Elderberries lingering jammy finish to our Dorset Dry Gin.
4/10 - Juniper Berry
Juniperus communis
The vital component in gin and the headline act in the Dorset Dry Gin, adding woody spice and piney dryness. Fun fact – this is no berry, its a modified pine cone.
5/10 - Coriander Seed
Coriandrum sativum
6/10 - Angelica Root
Angelica archangelica
Works as a drying agent in the Dorset Dry Gin, adding a bitterness that’s essential to its classic, London Dry Gin foundation.
7/10 - Orris Root
Iris germanica
Used less for its flavour and more for its trickery in binding and enhancing flavours, giving longevity to the gin. Derived from the root of the Iris flower.
8/10 - Cassia Bark
Cinnamomum cassia
9/10 - Bitter Orange
Citrus aurantium
10/10 - Lime Peel
Citrus × latifolia
